Lets get to know each other… I’m a 24 year old student and new wife passionate about my faith in Jesus, world politics, and all things health & fitness. Those are all the ‘macro’ aspects of my life but sometimes it’s the small things that bring me joy on a daily basis! I’m secretly obsessed with trying new local coffee shops where I ask the barista “what’s the best drink on the menu?”. This strategy comes in handy especially while traveling, which brings me to my next point, my husband and I Travel. Way. Too. Much. mainly to visit friends and family in Texas or Nebraska but we love New York, Colorado, and California as well. If I’m being honest I have to consider myself a bit of a food tourist, of course I love meeting new and interesting people or seeing a picturesque sunset on the beach, but the real goal of most of my trips is to find a super local, can’t find anywhere else, ingredient conscious restaurant. This inspires my love for cooking at home and contributes to my ever increasing grocery bill. In all fairness, I started cooking in high school probably because I grew up in an ‘ingredient household’ with no microwave. This essentially meant if I wanted a snack I would have to preheat the oven and throw something together. Over time my love for cooking transitioned from purely recreational to somewhat medicinal. In my late teens I started noticing some autoimmune responses and struggled with health issues for quite some time. I went to multiple doctors, got testing done, and tried a million supplements, only for my symptoms to improve minimally. The real healing I experienced came from a radical change in my diet and lifestyle I began researching where my food was coming from and prioritizing the quality of food I was eating. I truly believe that eating ‘healthy’ does not mean that food can’t be fun, I challenge myself daily and end up with some of the best meals that are not only nourishing but also delicious.
